An adventure called Callao presents the best of Chalaca art, gastronomy and music in San Isidro

With the name of An Adventure Called Callao, the Board of Trustees for the Cuisine of Callao, the Hyatt Centric San Isidro Hotel and the Ministry of Culture will present on October 8, 9 and 10 what will be a festival that seeks to promote art, gastronomy and chalaca music from the heart of San Isidro.

As Andrés Ugaz, president of the Board of Trustees, points out, the cooks of Callao open the doors of intimate living museums. “This time machine, which is the first Peruvian port, presents us with tuna mushiame, an Italian preservation technique that Andrés Angeles el Colorao de Chucuito will prepare on the days of the event, an intimate and cult cuisine where the customer is never right.”.

Special mention deserves the iconic pan with silverside – fisherman’s breakfast- which will be prepared by Don Guiuseppe and Mrs. Lidia Siles de La Punta, responsible for running an Italian chalaca tavern with more than three decades of life, the famous Don Guiuseppe, where there are always people waiting for a free table.

The prawn ceviche and catch of the day will be brought by Freddy Rámirez de la Combi Roja, the father of the ‘food truck’ in Peru with more than 34 years at the wheel.

A new generation of cooks without haste and with memory, will be represented by Jairo Félix del Comedor, who will put fried egg cups with Creole sauce on the sanisidrina table.

But it will also be Maritza rodriguez, family entrepreneur creator of Maricausas, whose huarique is one of the most frequented in the neighborhood.

And as salt calls sweet, the fruit creams – including lemon, carob and lucuma – will be in the hands of sisters Yolanda and Jessica. And the wines will be served by Peru Wines, produced by small producers from all over Peru.

An adventure called Callao, in addition to cooking, will feature live music by the Carlos Mantilla Orchestra, professional salsa dancers, vinyl record collectors and a photographic exhibition and sale of works by Chalaco artists. In addition to the presence of the muralist Eden Inti, who will finish a mural during the days of the event that he will donate to the Hyatt Hotel as a testimony of a festival that seeks to become a regular.

The event, which is sponsored by Molino el Triunfo, DP World, the Municipality of Callao and the regional government of Callao, has been in mind since before the pandemic.

With An Adventure Called Callao, the traditional chalacos seek to connect with Lima’s families and that, after the worst is over, they see Callao as a weekend destination.

It is an invitation to know the origin of Peruvian cuisine, a source of national pride and now an opportunity for the economic and emotional reactivation of families carrying the tradition, artisanal fishermen and cultural promoters. Peruvian cuisine owes much to the port of Callao, where everyone came to make contact with our pre-Hispanic wealth.
