Humitas de choclo: the recipe that will change your weekend mornings

INGREDIENTS

  • 1kg corn
  • 3 tbsp. lard
  • 1/2 cup chopped onion
  • 1 tsp. minced garlic
  • 3 tbsp. yellow chilli cream
  • 2 tbsp. coriander puree
  • 1/4 tsp. cumin
  • 1 tbsp. Butter
  • 1/2 cup Vegetables soup
  • 100 g cream cheese (Philadelphia type)

  • 1/2 cup black olives
  • salt and pepper

PREPARATION

Shell and grind the corn. In a thick-bottomed pot, heat half the butter and sauté the onion and garlic. Add the yellow pepper, coriander and cumin, and brown for three minutes. Incorporate the ground corn, the rest of the lard and the butter. Stir and pour in the broth. Season.

Lower the heat and cook stirring constantly until a soft dough forms. Remove and let cool. Cut the cream cheese, previously refrigerated, into sticks. Assemble the humitas with the pancas: put a generous spoonful of dough, fill with cheese and an olive, and cover with dough. Close the panca, form the humitas and tie them. Steam them for 30 to 45 minutes. Serve with creole sauce.
