Oh the cheese! What a delicious ingredient, with so many variations and so consumed all over the world. In Peru alone, more than 50 varieties are made, produced by more than 388,000 producers. Whether it is with bread, rice, pasta, meat, vegetables or whatever comes to mind, it is an ingredient capable of improving any recipe. To celebrate, Advantage brings together three preparations where cheese is the star of the menu.

Pan-fried cheeses

Ingredients:

  • 1/2 cup grated edam cheese
  • 1 tsp. ground black pepper
  • 1 tsp. paprika
  • 1 tbsp. Dried oregano
  • 2 cups mushrooms
  • 1 tsp. chopped garlic
  • 2 tbsp. olive oil
  • 1/2 cup grated butter cheese
  • 1/2 cup grated gouda cheese
  • Salt

Preparation:

Mix the cheeses in a bowl and put them in the refrigerator for 10 minutes. Put on the grill, over high heat, a steel skillet with a tablespoon of oil. Add the garlic and cook for three minutes. Add the cheeses and cook for about 10 minutes, until completely melted. Arrange the mushrooms on the edge of the grill and cook for six minutes. Sprinkle oregano and paprika over melted cheeses. Drizzle the rest of the oil and season with salt and pepper. Serve with the mushrooms.

Gnocchi with four cheeses

Ingredients:

  • 1kg huamantanga potato parboiled and pressed
  • 3/4 cup unprepared flour
  • 2 yolks
  • 2 tbsp. Butter
  • 2 tbsp. chopped white onion
  • 2 tbsp. White wine
  • 1 1/2 cups milk cream
  • 1/4 cup cream cheese (Philadelphia type)
  • 3/4 cup grated Parmesan cheese
  • 1/2 cup grated edam cheese
  • 1/2 cup grated Andean cheese
  • salt and white pepper

Preparation:

Bring four liters of water to a boil in a pot. Meanwhile, put the potatoes in a large bowl. Add the flour and season. Add the yolks, one by one, and mix with a spatula until you get a dough. Take it to the work table and knead with your hands until smooth. Divide the dough in two and form tubular strips. Then cut them into pieces and shape them into gnocchi.

Put them in a floured container, separated from each other. When finished forming the gnocchi, cook them in batches in the boiling water. Take them out and drain them. Melt the butter in a skillet over medium heat. Add the onion and cook for three minutes. Pour the wine and let the alcohol evaporate for a few seconds. Add the milk cream and cream cheese and cook for two minutes. Add half a cup of Parmesan cheese and the Edam and Andean cheeses. Stir until you get a sauce. Season and pour over the gnocchi. Serve and sprinkle with remaining Parmesan cheese.

three cheese pizza

Ingredients:

  • 2 large discs of precooked dough
  • 3 tbsp. oregano
  • 4 tbsp. olive oil
  • 150g parmesan cheese
  • 200g edam cheese
  • 200 g mozzarella cheese
  • 300 g English ham
  • 8 tomatoes without skin or seeds, sliced
  • 2 cups homemade tomato sauce
  • salt and pepper

Preparation:

Make long, shallow incisions on both pizza disks so that the sauce can moisten them. Place tomato sauce and tomato slices; Season with salt and pepper. In a bowl, mix the grated mozzarella cheese, chopped edam cheese, ham, olive oil, and oregano. Season. Spread ham and cheeses over discs and sprinkle with Parmesan cheese. Bake in hot oven for approximately 25 minutes. Serve immediately and accompany with chili.
