Brasa21, this is the new ‘dark kitchen’ that has chicken as the protagonist of its menu

The Peruvian eats chicken. But to say that he eats it is not enough, the Peruvian -almost- idolizes it and it is a fixed ingredient in the menu of most families. Perhaps because of its price, because of how profitable it can be or because of how easy it is to cook, this bird is part of the bet of thousands of restaurants throughout the country. For this reason, when new gastronomic spaces are opened, it is likely that the menu will not surprise us at all. Thinking of breaking this is that Brasa21 was born, a dark kitchen that offers different and succulent options based on this protein. This brand was born during the pandemic, as an effort to diversify the commitment of FOODPARTNERS, a holding company restaurant that is part of the SP Group. “As a group we have different business units and with what happened due to the pandemic, we realized that we had to diversify the options. This is how the idea of ​​developing a restaurant format that can be managed virtually was born”, explains David Benites, Product & Development Manager.

But, with so much new offer, the question arose of how to differentiate itself. “We started offering grilled chicken, but soon we realized that there was a lot of competition in this area. That is why we wanted to turn the business around and thought of a chicken deli”, adds Benites.

Now what is a chicken deli? This is a restaurant where the menu revolves around chicken, one of the most consumed animal proteins in our country. In other words, you can not only enjoy the classic and succulent grilled chicken, but also sandwiches, chicken strips -or chicken tenders-, salads, wraps and more.

East dark kitchen It has been running since September 2020 and they have a large audience. “The response has been quite good from the first stage until today. The most frequent question is if we have a physical location, but at the moment we only serve through delivery. (…) In fact, as a result of this, the growth plans are more tangible and we have the idea of ​​opening at least four more kitchens”, comments Jose Franco, partner and director.

According to what they told us, the name of the brand is due to the fact that the recipe to prepare this dish includes 21 secret ingredients. The skin is crispy and flavorful and the chicken is cooked to perfection, still juicy. You can accompany it with some delicious fries -those wavy and super crispy- and with a fresh salad.

Another of the star preparations on the menu are the chicken tenders, also known as chicken strips. These are pieces of chicken, usually breast, breaded and fried. Here they prepare them to perfection, they are really tasty and crispy on the outside, the breading does not separate from the meat and the protein is well cooked and juicy.

This snack can be enjoyed on its own, served with French fries, or as part of other preparations. Thus we find the wraps, flour tortillas stuffed with chicken and vegetables, a perfect dish if you want to eat something light but no less succulent. You can also ask for a sub nuclearan sandwich which is filled with chicken tenders, sauces such as buffalo or smoked bbq and accessories such as cheddar cheese, bacon, pickles or onion rings.

If you want options to share you can choose a delicious salchipapa served with tenders or perhaps a portion of wings which can be crispy, bathed in smoked BBQ sauce or buffalo sauce. If you want something fresh and light, the salads -such as Cesar or Honey mustard- are the perfect option.

Finally, to close the meal in the sweetest way, they have desserts such as Lúcuma Lust, Choco Beats or Chirimoya Mood. These are frozen mousses served with toppings like crispy meringues, brownies, blancmange, fudge and more.
