A cream always comes in handy and much more so when you can achieve the maximum flavor of your vegetables with quick and easy techniques. The Gastronaut gives us a delicious prescription made with only 5 five ingredients.
Follow the steps:
- 3 Italian tomatoes
- 1 bell pepper
- 1 red onion
- Salt and olive oil to taste
- Optional: garlic, aromatic herbs
Preheat the oven to the highest possible power. In my oven, the temperature reaches a maximum of 250 °C. While the oven is preheating, chop the tomatoes, pepper and onion into cubes. It does not matter how big or how small we cut it since we are going to blend it, but the smaller the cuts, the more surface we will have to brown in the oven. We season with salt, add a generous splash of olive oil and we can also add minced garlic or aromatic herbs such as thyme or rosemary.
Once ready, we take it to the oven for 20 to 25 minutes or until we see the vegetables very golden or, rather, slightly caramelized. Remove from the oven and go through a food processor or a blender to integrate all the ingredients. It is not necessary to add more liquids because the same water that is released from the vegetables will allow us to blend them. If you want to make it even creamier, you can add milk, cream or even vegetable broth. Rectify the seasoning and serve with a drizzle of olive oil, cream or balsamic reduction.
