Ingredients
- a hot pepper
- A package of soda crackers
- ½ onion
- 50 grams of fresh cheese
- Evaporated milk (as needed)
- Salt to taste
- A dash of vegetable oil
Preparation
Take the rocoto, remove the seeds and chop it. Blend the hot pepper, cookie, onion, cheese and evaporated milk, which I recommend you add little by little, until you get the right texture. The last ingredient is salt to taste and a splash of oil. If you feel that your cream lacks more liquid, add more milk; if you feel it more liquid, you can add cookies.
NOTE: If you want to enjoy a less spicy rocoto cream, I recommend boiling the rocoto twice, changing the water. Once you drain it and let it cool, you can do the procedure. If you have chestnuts or pecans on hand, you can add two units to the preparation. You can store this rocoto cream covered in the refrigerator, overnight.
