The simple and tasty chicken curry recipe to give variety to your menu of the week

  • 900 g cubed chicken
  • 1 tablespoon of oil
  • 1 white onion chopped
  • 2 garlic cloves minced
  • 1 teaspoon grated ginger
  • 1 teaspoon cumin powder
  • 2 tablespoons curry powder
  • 3 cups of coconut milk
  • 1 teaspoon salt
  • 1 can of coconut cream


In a saucepan over medium heat, heat a splash of oil. Once hot, fry the onion together with the garlic and a pinch of salt to help it sweat quickly. When the onion is translucent, we add ginger, cumin and curry. Toast for 3 minutes to release their aromas and then add the cubed chicken. Stir until all sides of the chicken cubes are sealed. It’s ready once they look white. Add the coconut milk along with the teaspoon of salt and let it boil for 30 minutes. Finally, we lower the heat, add the coconut cream, rectify the seasoning, bring it to a final boil and when it reaches the desired consistency, we are ready to serve on a bed of rice.
