Do you know what the omakase experience is? Know the bet of the Fan restaurant

On the corner of the block two Calle García Calderón in Miraflores opened a new experience of japanese influence, Chinese and Peruvian. It’s called Fan just like cooked rice in Chinese, which symbolizes his proposal, and it also sounds like ‘fun’ in English.

“We are 3 passionate crazy people who are fascinated by Nikkei food”, says Santiago Won, one of the three partners of Fan. “What we are looking for is to surprise all the palates that we can in Peru and, ideally, in the world.” Won comments that Fan is not about excessively purist or fusion cuisine: “Our goal is to put together an intelligent, signature cuisine that can subtly take the best of Japanese theory and apply it to this beautiful and diverse Peruvian context. what we have. To come to Fan you don’t have to have the most exquisite palate. We do carry the best products, but all you have to do is come and be surprised by the new food”.

What makes them different? In addition to the menu of dishes and drinks, Fan proposes a different experience at lunchtime and it is called omakase. This Japanese expression means ‘I leave it in your hands’; that is to say, the diners are left to the will of the itamae (Japanese chef), and in Fan it is very worth surrendering the palate to his proposals.

Santiago Won, Romina Wong and Jorge Sasaki, are of Chinese descent and the third, Japanese.  The world of cooking and business is in his veins: Jorge Sasaki, the executive chef and creator of the menu, is the grandson of the renowned Angélica Sasaki and, in the place where Fan is located, decades ago the old winery of Roman's grandparents.

Won explains that omakase was born when Japan began to further develop the concept of sushi and these small places emerged where teachers served people in small bars with a maximum of 6 seats: “People came to this family atmosphere, it was like a house and they tasted what these artists known as itamae prepared based on their creativity and what nature offered them at the time. Omakase is very much linked to trust.” The freshest, most representative and original will be served in 11 steps with the recipes of the executive chef and partner of Fan, Jorge Sasaki.

What is the omakase experience at Fan?

“The experience also involves a sampling of sake so that they can combine it with the dishes and savor the rice liquor. Rice is what will be present in all the steps”, details Romina Wong, also a partner of Fan along with Santiago Won and Jorge Sasaki, the first two of Chinese descent and the third, Japanese. Why are your origins relevant in Fan? “What we have wanted to do in this business is to bring the best of our cultures, including the Peruvian. We want to exploit the flavors and for the diner to open their minds towards new flavors and combinations that you will not be able to find anywhere else”, continues Romina.

Hotate manchego crispy rice.  Shells on a base of crispy shari, loche butter, Manchego cheese, tare.

The presentation of each dish stands out visually due to its color combination. They are author creations with textures, salty, citrus, sweet and bitter flavors.

Nigiri smoked tako.  Octopus nigiri, smoked carrot butter, truffle oil, furikake, pituca chips.

Among the proposals will be cuts of bonito, parrot and catch of the day; tiradito, oysters, clams, scallops and razor shells. Plate after plate is served, and if you sit at the counter, you can watch the itamae being prepared. Of course, keep in mind that the 11-course menu varies according to the chef’s choice. It will be 1 hour and 45 minutes of surprising flavors, explosions in the mouth with textures at every step.

Another detail of Fan is that if you liked any of these steps you can find it in the menu in its largest and most individual version. It can be accompanied with signature cocktails and a variety of sakes.
