In case you did not know, Yo Madre’s Recipes brings us a new formula to enjoy the lentils left over from Mondays. It’s about the prescription of creative lentil croquettes.
Follow the steps in this recipe:
Ingredients
- A cup of boiled lentils
- One onion diced
- 2 cloves of garlic
- 2 tablespoons chopped coriander
- ½ cup chopped mushrooms (optional)
- A cup of breadcrumbs
- Salt to taste
Preparation
Step 1: Heat a splash of oil and add your diced onion and let it brown along with the minced or ground garlic for about 4 minutes, over low heat.
Step 2: Add the chopped mushrooms, if you decide to add them, otherwise you can easily ignore it and replace them, for example, with grated carrot, peas, spinach. Let it sauté a couple of minutes, to add the lentils and the breadcrumbs.
Step 3: Mix everything and leave it on very low heat for about 3 minutes and add salt to taste
Step 4: Transfer your preparation to a container, let it cool and assemble your croquettes, it can be in small balls or hamburger type.
Step 5: Heat oil and fry them. This cooking is fast because everything is cooked. You just need to brown.
NOTE: You can add two tablespoons of Parmesan cheese to your preparation. Another option is to use the lentils left over from the day before in the preparation so as not to waste them. I assure you that they will be delicious.
