Tortillas are one of those versatile dishes that you can combine with various ingredients and a lot of creativity. Yo Madre’s Recipes presents us with a delicious prescription baked broccoli omelette that can be served with mushrooms or shredded chicken.
Follow the steps:
Ingredients
- 250 grams of broccoli
- 4 eggs
- ½ red or white onion
- ½ teaspoon pepper
- ½ teaspoon salt
- 4 units of hot dogs
- A cup of mozzarella cheese
Preparation
Boil the washed broccoli for about 3 minutes. Drain the water and reserve. Cut the broccoli and the hot dog into slices or as you prefer. Place a drizzle of oil in a frying pan and sauté the julienne-style chopped onion for about 2 minutes. Then add the sliced broccoli and let it sauté for a couple of minutes. Withdraw and reserve. Beat the eggs together with the pepper and salt. Add the broccoli preparation and the chopped hot dog. Mix everything and correct the salt if necessary. Take a refractory dish and lightly grease it both on the bottom and on the edges. Add the mixture and cover the entire surface with the grated mozzarella cheese. Take the preparation to the preheated oven at 180 degrees for 25 minutes, until the cheese gratins.
NOTE: You can add chopped mushrooms to this delicious tortilla, but you will sauté it together with the onion and broccoli. You could also replace the hot dog with shredded chicken and even tuna chunks. If you don’t have mozzarella cheese, use any cheese that melts.
