University ‘Points’: the 3 favorite sangucherías of the UPC, PUCP and University of Lima | VIDEO

sanguchería: Said of the establishment of Peruvian origin that is dedicated to serving various combinations of breads or sandwiches. Perhaps this is the formal definition, however, for any compatriot, this word comes loaded with a much more emotional meaning. Leaving aside the constant debate about its correct spelling or pronunciation, sandwiches have always been by our side at breakfasts, breaks, “hollows” at the university, or even after a night out.

But how do they manage to be so present? Sandwich shops have known how to expand over the years to strategic locations that increase their number of customers, such as in the vicinity of universities. Thus, they became the perfect allies of the students, helping them to get out of trouble or, simply, allowing them to enjoy a pleasant moment with their friends at the end of classes. Some of them are Panyp, Uncle Mustache and La 22 Sangucheríawhich offer delicious options that have become favorites among college students.

It’s 11 in the morning on the outskirts of the Lima University and you can see a large number of students advancing in groups towards a specific place. “Where are you going?” I ask them. “To Panyp!”, they answer excitedly. And it is that, a few steps from the university classrooms, specifically in the facilities of the Educational Association 20, are the best breads with chicken in the area.

French bread, shredded chicken, celery, cabanossi, house mayonnaise and chili pepper made with a secret family recipe, are the ingredients that make up the three acclaimed combinations offered by Paola Valdez, founder of Panyp. “My story began selling on the streets of various parts of Lima, I could not deny that I did not have the best moments there. Luckily, the whole of the academy offered me a place within their establishment, creating a safe space where I can sell in peace ”, she says.

From the conjugation of “bread” and “chicken” is where its name comes from, referring to the simplicity of its proposal, which does not neglect the quality, flavor and mother’s touch in each of its sandwiches. “My day starts at four in the morning. I get up to assemble each of the buns with the supplies that we left ready the night before. This way, it is much easier to serve the students who come to shop daily,” she adds.

Dozens of hungry students from the University of Lima arrive at Panyp every day.  Social networks are the best allies in spreading your sandwiches.

The previous preparation of the sandwiches guarantees that the speed with which he seeks to serve his diners does not harm the flavor of the bread with chicken and the affection with which he receives them. In this way, with the help of her daughters, Paola continues to do what she likes the most while she offers the students a snack that they will constantly come back for once they try it.

2. Uncle Mustache

It is enough to take a bite of one of El Tío Bigote’s sandwiches to realize that his fame among the students of the Pontifical Catholic University of Peru it is due to much more than the affection they have for him. Well, after more than 29 years of presence in their hearts -and stomachs-, his culinary proposal has been perfected to obtain the most acclaimed combinations of chicken, hamburger, Milanese or chorizo.

Carlos Abanto, founder and image of El Tío Bigote, was baptized that way by his own “nephews” due to his characteristic mustache and warmth with which he served customers. “This adventure was started by my wife, I joined her and we decided to place our blood cart on the outskirts of the Catholic, where the students received us with great enthusiasm and affection”, he explains.

It is as a result of the pandemic that they moved to their own premises, where today they attend with their daughters. “They are the future of El Tío Bigote, which is why I have always had them in mind in the family business,” she adds. However, Carlos still misses the days when he would sell from his cart. “That way I could talk face to face with the boys, now it’s a bit more difficult, but we couldn’t go back either,” he says.

Carlos Abanto continues to happily prepare his acclaimed "mustachepedidos" for anyone who wants to try them.

“Uncle, the pandemic didn’t take you away,” some moved students told him after seeing him after confinement, to which they immediately ran to hug him. And it is that, it is not only the students who come after class to try the delicious sandwiches, but also former students who still look for El Tío Bigote to receive two slices of bread with a lot of nostalgia inside.

Among the most requested sandwiches are the Royal hamburger, the frayed chicken, the Milanese with egg and the Mustache hamburger.

3. The 22 Sanguchería

Inside the gastronomic emporium around the CPU from Monterrico, where chifas, cevicherías and restaurants with chicken broths reign, stands a sanguchería that has managed to make diners fall in love with the most creative proposals of salchipapas, hamburgers, frankfurters and more. La 22 Sanguchería, the bet started by Carlos Caillaux in the 22 block of Avenida Benavides, in Miraflores, has become a cozy, functional and warm place that has a proposal of the highest quality in meats and supplies; but with all the advantages that a ‘fast food’ chain would offer you.

Carlos Caillaux is the founder and general manager of La 22 Sanguchería, which inaugurated its fourth location in front of the UPC of Monterrico.

“We wanted to start an artisan burger business, since we knew there was a lot of market for them. A new concept of fast food that offers customers angus beef burgers with restaurant category”, says Caillaux. Due to this tempting proposal, it is that from 2014 to today, they have opened more than five branches throughout Lima.

With the return of face-to-face classes, the premises in front of the UPC have been able to come back to life after two years of waiting for the pandemic. Currently, students come especially in the mid-afternoon hours, in which they can calmly enjoy the diverse menu in a comfortable environment. “Among the students, despite the fact that some do not like to escape from the classic options, we also have a high sale of our special sausages, hamburgers, sandwiches and also à la carte dishes,” he adds.

Made up of angus beef, brioche bread, tartar, glazed onion, mushrooms, double cheddar and tomato;  the Glazed hamburger is one of the favorites of La 22 Sanguchería.

The 22 Sanguchería includes a vast offer of options from the house, among which the Glazed hamburger stands out –angus beef, glazed onion and double cheddar–. The businessman’s recommendations go through the 22 Power salchipapa -municipal frankfurter, fine herbs chorizo ​​and barbecue-, and a frankfurter Cheddar Tocino -brioche bread, frankfurter, melted cheddar and bacon-. Thus, with these options, you can end a good afternoon of cravings with friends after an intense day of classes.
