Blueberry pancakes: the sweet and versatile recipe with berries

Yo Madre’s Recipes give us this prescription of blueberry pancakes that can easily be replaced with raspberries, strawberries, chopped banana or grated carrot.

Follow the steps and use your imagination:

Ingredients

  • 1 cup plain flour
  • 1 cup whole milk or jar
  • 1 cup of blueberries
  • 1 egg
  • 1 tablespoon melted butter
  • 1 teaspoon of baking powder
  • a pinch of salt
  • 1 tablespoon honey

Preparation

With this base, you could easily replace the blueberries with raspberries, strawberries, chopped bananas, grated carrots and much more, keeping the amount of one cup. The mix is ​​very versatile. In a bowl, put all the ingredients –with the exception of the blueberries–, and mix with a spatula until they are well integrated. Once everything is integrated, add the blueberries. You can add them whole, chopped or mashed with a fork. Do not forget that you can choose the sweetener you prefer for your preparation: brown or white sugar, honey, panela or stevia. The important thing is to try to make it to your liking.

Heat a drizzle of oil in a frying pan and fry the pancakes. You decide the size and quantity of the dough. For each pancake I usually put two tablespoons. At this time, do not neglect the preparation and let them brown for about 3 minutes on each side, but always controlling. Once fried, I recommend putting them on top of absorbent paper to remove any excess fat.
