‘Breakfast’ Burritos! Everyone loves them, they are super easy to make and only with three ingredients. Excellent recipe to take advantage of including vegetables in the omelette, such as spinach, peppers or tomato. This time I accompanied them with avocado on the side.

Ingredients:

  • Wheat tortilla 16 cm in diameter (they are the classic size, not the large one)
  • 4 eggs
  • 6 slices of Cheddar cheese
  • A few drops of olive oil or a ¼ teaspoon of butter.

Preparation:

Heat a small non-stick skillet and add a few drops of olive oil, just to smear the bottom. Then pour the previously beaten and seasoned eggs. Cook the tortilla, it will be a few minutes per side. Remove it and cut it into 6 rectangles. Also cut the cheddar cheese slices into 2 rectangles. Then assemble the burritos. Place the tortilla first, then the cheese in the middle, on top of the egg and then the other cheese, like making a tower, fold the lateral sides inwards and then wrap the vertical ones. Then seal the burritos in the pan over medium heat, starting with the fold side, just until lightly browned. Accompany with avocado. Enjoy them!
