- 200g salted butter (room temperature)
- 3/4 cup brown sugar
- 3/4 cup white sugar
- 2 eggs
- 2 teaspoons vanilla
- Juice and zest of 2 lemons
- 2 1/2 cups plain flour
- 1/2 teaspoon bicarbonate of soda
- 1/2 teaspoon salt
- 1 cup white chocolate chips
- 1 cup dried cranberries
Preparation
Preheat the oven to 180°C. While the oven is heating up, in a bowl, cream the butter at room temperature with the white sugar and brown sugar. Add the eggs one at a time and continue beating. The mixture will cut, but don’t worry that adding the dry ones will bring it back together. Pour in the vanilla essence, juice and lemon zest, then sift the dry ingredients directly into the bowl. Lastly, add the chocolate chips or chopped chocolate along with the dried cranberries. Put in the fridge for 15 minutes.
Portion with the help of an ice cream scoop or with the help of a spoon, and put in a previously buttered and floured baking dish or with parchment paper. Try to leave 2 fingers or 3cm between each cookie as they will expand once in the oven. Bake for 10 to 15 minutes, long enough to see the edges lightly brown but the center still soft.
