Andean banquet: discover the Huancahuasi stews with the guinea pig as the protagonist

In my family it is inevitable to celebrate with a guinea pig on the table, well fried to eat to the bone”, says chef Paola Palacios, Huancaína and leader of the famous Huancahuasi restaurant, while we taste the dishes prepared for the holidays.

In addition to a beautiful presentation, the rolled guinea pig is stuffed with asparagus, hot peppers, artichoke, glazed sweet potato and melted buttery cheese: “At our dinner the star is the guinea pig. When you eat this oven-rolled guinea pig, you will not only feel the guinea pig flavor; but a variety of flavors. Thus, more people will be encouraged to try guinea pig meat, which is so tasty, nutritious and low in fat”, stresses the chef.

Paola Palacios is the chef at Huancahuasi, a family business that maintains its tradition.

But that is not all. The pig is also an important part of the Huanca tradition during the holidays. For this reason, in Huancahuasi they have a presentation rolled and baked in their sauce, for those who do not eat guinea pig or turkey: “It has a filling of meat and nuts. In addition, we have our proposal of pork rib with a sauce made from golden aguaymanto, high in vitamin C”. This Andean fruit is enjoyed in several of the Huancahuasi dishes, both in sweet and sour sauces and in salads and desserts. It is part of his commitment to revalue Andean ingredients such as this delicious sauce poured over the ribs.

But if, despite the variety of meats, the fervor towards turkey still remains, the favorite Christmas bird is not missing from the Huancahuasi dinner. A turkey roll stuffed with meats such as beef and pork and nuts, is made for those who are used to it. You can also order the whole turkey in the oven or medallions in their juice.

Among the accompaniments, the inevitable white rice with abundant corn kernels and the surprising Qolli rice (‘purple’ in Quechua) made with chicha morada, grape juice and blueberries with a little chia and pecans stand out. As well as the potato cake with abundant Andean cheese, mozzarella and Parmesan, presented with great delicacy. “We have brought the Arequipa recipe,” comments Palacios. “It is so that there is a little piece of Arequipa on our tables.”

The salads also stand out in this restaurant for their diversity and contrastable flavors such as their classic cooked salad for those who like to eat healthier such as asparagus, carrots, green beans and bell peppers; or a solterito with quinoa and serranito cheese. Another unmissable and fresh option is the Misky salad: “It is sweet and its main base is a camu camu and aguaymanto vinaigrette. It has quail eggs, chia, aguaymanto, nuts, peach and mango.

Some drink options are their aguaymanto and prickly pear soft drinks or the cup chocolates that have become the favorites of these parties: “As a few years ago we released our panetón of seeds and golden grains, we decided to make a kiwichocolatada based on Cusco cocoa and from Oxapampa. Also, it has quinoa, cañihua and kiwicha. It is a chocolate made from the three golden grains so that when they drink it it is nutritious and very healthy. Our superior cream is made only from egg whites. At home you can make a cream based on egg whites or stevia”, says Paola Palacios closing the tour of the banquet in Huancahuasi.

The kiwichocolatada is one of the favorite drinks at Christmas parties.  But, Huancahuasi has more hot and cold options.
