Provecho visited a new restaurant and cocktail bar located in Ravine looking for delicious and creative cocktail ideas to celebrate this New Year 2023. It is called Eme, like the consonant, and her name is born from the words that derive from her and are linked to her concept: myth, mystery, dawn, delicacy.

“Eme was born from the idea of ​​opening a restaurant in one of the most bohemian neighborhoods of Lima. I got together with a good friend of mine, chef Alexander Reyes, and we combined the kitchen and the bar. Eme is a contemporary cuisine restaurant with local products where we work a lot on fresh products and seasonal ingredients linked to the good cocktails that go hand in hand with me. It is a gastronomic place where you can eat and drink different things at a good cost and have unforgettable experiences”, explains Gerson Tamara, Eme’s partner.

To give us ideas for different and festive cocktails, Tamara and the bartenders Piero Elías and Jhonatan Salazar, prepared 4 cocktails between bitter and sweet thinking of the different types of audiences and palates. At the same time, they are easy drinks to make at home: “We have worked on Bitter and Sexy, which is an aperitif cocktail with a bit of coffee, rum and vermouth for people looking for flavors like bitter chocolate. Then we have something fresher with grapes for those who like mimosas or Bellini. We have another punch-type cocktail with cinnamon, mistela and egg yolk. They are different flavors for different profiles.”

1. ‘Match in Tinder’

The bartender Jhonatan Salazar prepares this refreshing cocktail ideal to celebrate the New Year.

Ingredients

  • Burgundy Grape 1.5oz
  • lillet blanc 1.5oz
  • Pisco Quebranta 0.25oz
  • Prosecco complete

“It is quite a refreshing cocktail. It has burgundy grapes, aromatized wine to give it fresh notes, pisco from broken grapes and sparkling wine for bubbles. It is decorated with a small flower and is ready to be enjoyed”, explains Piero Elías, Head of the Eme Bar.

2.’Bitter & Sexy’

For lovers of snacks.

Ingredients

  • Aged Bacardi 1.5oz
  • Vermouth rosso 1oz
  • Grapefruit Cordial 1 Dash
  • Orange Bitter 1 Dash
  • Brine 1 Dash

Are you a lover of appetizers? This cocktail is for you because it has an intense profile. Elías tells us about the recipe: “It uses aged rum, rosso vermouth, the special touch goes with a cold brew that can be found in any cafeteria, orange bitters and liquid smoke. As decoration, it has a small sheet of chocolate.

3. Speak Chichin

Piero Elías, Head of Barra de Eme, offers another refreshing option for the summer and New Year's festivities.

Ingredients

  • Bacardi 2oz
  • passion fruit 0.75oz
  • pineapple 2oz
  • Red fruit syrup 1oz
  • Lemon 3/4oz

Elías explains that the Habla Chichin cocktail is a refreshing, fruity, rich and easy drink to prepare at home: “It is based on aged Bacardi rum and a part of passion fruit to give it some fresh touches. The sweet touch will go with a red fruit syrup and we complement it with golden pineapple juice. This cocktail goes through a clarification process to separate particles, it is shaken and served. It is combined with tonic water ”, he details.

4. ‘Do you want a dessert?’

This cocktail is considered an irresistible dessert.  The cup is wrapped in cinnamon.

Ingredients

  • Mistela 1.5oz
  • Vermouth rosso 1.5oz
  • Bailey’s 0.5oz
  • Yolk 1 dash
  • 4 Dash Chocolate Bitters

“We start with mistela del mar, which is a blend of grape must with quebranta. Baileys to give it sweetness and a bit of body, vermouth to make it aromatic and floral. It is a sour style, but what makes it different is that instead of having white it has yolk. It is mixed so that the yolk breaks and the flavors mix well, and it is mixed”, says bartender Jhonatan Salazar.
