Soak the chickpeas from the night before or until they double their volume. Discard the water and place the drained chickpeas in a pot with water until it covers them. Cook until the chickpeas are soft, drain and reserve 2 cups of cooking liquid. Place the chickpeas in a food processor or blender and blend the chickpeas together with the rest of the ingredients until the desired consistency is achieved. The cooking liquid is used to make the hummus thicker or thinner. Serve with an additional drizzle of olive oil, paprika or chili flakes, and chopped parsley.
