Magic garlic: we put to the test the viral TikTok recipes that get the most out of this ingredient

If I had to choose just one ingredient to accompany me for the rest of my life in the kitchen, it would be garlic. Its aroma, flavor and texture is ideal for different preparations and I am one of the people who considers that there is never “too much garlic” in a recipe. When I saw the Tik Tok viral that teaches how to prepare roasts, I decided to put it to the test and here I will tell you about my experience and give you some tips so that you can do well in the attempt.

There are two recipes that I have chosen for this note: the garlic Confit and the roasted garlic. The former are prepared with a copious amount of olive oil (enough to dip the garlic cloves in), while the latter are cooked unpeeled and with considerably less oil.

The ideal of both recipes is their versatility. They can be enjoyed on toast or combined with softened butter to make the best garlic bread in the world. They can also be combined to prepare vinaigrettes or accompany pasta and meats of different types.

Another recommendation is to take the opportunity to prepare more than one baked recipe, thus using its power for different purposes and not spending too much gas.

The recipes

In the case of garlic Confit (or garlic confit) the task can be a little more complicated if you don’t have peeled garlic. In our case we used about 15 garlic cloves and put them in a container suitable for the oven. To this we add a cup of olive oil, salt, pepper, oregano and thyme. The idea is to flavor the garlic to your liking, you can combine spices or condiments at your discretion.

Once you have everything well mixed, you can cover it with aluminum foil (the brightest part is on the outside) and cook in the oven at 180 degrees Celsius for 45 to 60 minutes.

Another option is to cook them in a heavy-bottomed pot for 30 minutes over medium heat. The important thing is to take care that the garlic browns but does not burn completely. To check that they are ready, you can take one out and crush it, the idea is that it ends up like a puree.

In our case, we decided to spread these garlic cloves on freshly toasted bread and crown it with a pinch of salt. A delight not to be missed.

They can be stored in an airtight glass container in the refrigerator to use on more than one occasion and the infused oil is an ideal ingredient to accompany whatever you want.

The other recipe is that of the roasted garlic and it is, perhaps, the most practical of the two since it is not necessary to peel them, you just have to cut the whole head to expose the garlic and put it in aluminum foil.

The following is quite simple: it is sprayed with oil (your choice, we use sunflower), salt, pepper and if you want any extra seasoning. Believe it or not, with the first three you will achieve a delicious preparation where the flavor of garlic prevails but in a softer version and an almost sweet touch.

The heads of garlic are wrapped in aluminum foil as airtight as possible and baked for 30 minutes at 180 degrees Celsius. The result is, similar to the previous one, really soft garlic cloves that can be removed from the shell by crushing them to combine them with whatever you want.

To take advantage of this recipe, we put a little neutral oil in a pan with 3 – 4 garlic and crushed them to create a paste. We add a little hot water to them and then cooked noodles to put together a little sauce. Top with Parmesan cheese and that’s it.
