Rice or chaufa with seafood? We tried two delicacies from La Red restaurant and we tell you which one to order for delivery

One of the greatest treasures of Peruvian gastronomy is marine cuisine. Our sea is home to delicious treasures and national creativity has taken advantage of its diversity of inputs. Proof of this is a classic rice with seafood, a faithful companion to ceviche but also a dish worthy of being the star of any menu. Therefore, today, from Advantage, we put this confrontation on the table and in this versus culinary We ask ourselves: rice with seafood or chaufa with seafood?

To enjoy both dishes we think about the La Red restaurant, which for 40 years has been offering Creole and marine delicacies with all the homemade and traditional seasoning of the neighborhood cevicherías. It was inaugurated in 1981 by Doña Isolina Vargas Reyes, mother of the well-known chef Jose del Castillo who is part of the team. His letter includes classic entries as a cause, Huancaina’s style potato and avocado salad; soups such as the stretcher or the Suck Fish; Creole funds like him roast with puree and rice and tongue stew. In addition, in the marine menu we can find chorrillana fish, olive octopus, jellies and a classic ceviche carretillero.

The contenders in this versus do not need much introduction because they have become two must-see classics. Both combine seafood with rice, but the trick is that the seasonings are what completely differentiate them. On the one hand we have a much more version creole. On the other, a combination between Chinese cuisine and Peruvian Creole.

Delivery and presentation

The order arrived in Excellent Condition: in a well-closed paper bag, with a label that verifies that it was not opened by anyone and in which they indicate who packed it. It was delivered with all the necessary care and in a cardboard container with a plastic lid, which they indicate is reusable. The temperature of the plate was correct and fortunately, since it was rice, the humidity did not affect the food at all.

Seasoning and flavor

This dish is one of my favorites in seafood and this category is my favorite, so expectations were quite high. Let’s put it like this: if it comes to accompanying the ceviche with something, rice with seafood will always be my favorite choice and I consider myself a connoisseur of this dish.

Let’s start with the rice. Here they achieved the balance between a grained rice and an atamalado one, which I consider is the right point to serve it. The seasoning and juices from the recipe are mixed with the rice to achieve the perfect texture. Every grain was packed with flavor. The Creole and traditional taste that one expects when trying this delicacy was there and did not disappoint. Now, seafood is a difficult thing to cook to perfection and even more so that they hold a delivery. But this was not a problem, since when we tried the seafood mixture these they were so soft they broke with the spoon. Forget a gummy shrimp or an impassable octopus, La Red knows how to handle its seafood and the expertise of 40 years is noticeable from afar.

Quantity and servings

We must be clear: since it is a dish where rice is one of the protagonists, in short it is forceful. If you are like me, and you prefer to try several options, this dish can serve up to three people. If you prefer to eat only one dish, then this option is also ideal. Of course, the seafood portion felt smaller than in the case of its opponent, but nothing absurd.

Delivery and presentation

As in the previous case, the order arrived safely and all biosafety protocols were met necessary. It also came in a well-sealed paper bag and the container was cardboard with a plastic lid. Each container was presented with a label indicating which dish it was and who was in charge of serving it. The temperature of this dish was also correct, it was precise enough to be enjoyed without having to heat up (a plus when it comes to seafood preparations).

Seasoning and flavor

When I planned this versus I had the preconceived idea that the chaufa with seafood was a combination that I did not like. I had tried it in three or four places and the dressing was too strong, the seafood was hard, and I found the combination very off-putting. For this reason, I never dared to try this dish in other restaurants.

Luckily, I ventured to give it a try at the hands of La Red and there is no going back. It is a fairly classic chaufa with granulated rice, generous chunks of egg omelet, green and fresh Chinese onion and a soy taste that does not overshadow the seafood. That smoky touch who usually has a chaufa was present and ended up convincing me. The seafood mixture which includes octopus, squid, prawns and shells it was cooked to perfection. This is undoubtedly one of the delicacies for which I will return to try the seasoning of the restaurant. Even when we reheated the dish, to enjoy it as a dinner, the seafood retained its tenderness and the rice didn’t feel too hard or too soft.

Every bite was a pleasant experience and all the ingredients worked in harmony, like an orchestra that performs a piece of music to perfection.

Quantity and servings

Here the chaufa wins again. Yes, like its opponent is a rice-based dish, so it’s definitely blunt. I think if someone wants to enjoy this dish alone, they will fight it because it is really great, that’s why I recommend sharing it. But I think you won my heart for the abundant amount of seafood that carries. The proportion of rice, seafood, egg and Chinese onion was sublime, you did not feel that there was much of something left over or something else was missing.
