Acevichado vs. california: who is the real king of the makis? We tried both and this is our verdict

One of the foods that has cost me the most to learn to eat is the makis. It’s not that I don’t like raw fish or rice, but there is something that is very important and can sometimes be lost: the quality of the products. Thus, I undertook the titanic task of exploring various restaurants that offer this type of sushi until I found my favorite. But then, with the pandemic and the respective quarantine, my search turned to the delivery format and I thought, why not include it in a culinary versus? This is why in Advantage we present a contest between a Peruvian version and an international classic. Which one are we left with?

We know that there are well-known restaurants that offer this japanese preparation, but here we are also committed to showcase new ventures. That is why we tested part of the letter from And Rolls, a dark kitchen from comida nikkei mainly focused on an interesting list of makis. They include traditional versions, like the ones we put to the test, but also new flavors such as Kuma, with cheese, salmon and avocado, or Yaki Tako, stuffed with avocado and shrimp, and topped by anticuchero octopus.

The order arrived with all the necessary care. Each container arrived in a fully sealed bag (as if to give us the assurance that it has not been opened). The main box, where the makis came from, is of paperboard and strong enough that they won’t warp on the way. The temperature of the rolls was adequate. A very pleasant plus is that the decoration of the box is beautiful and goes with the identity of the restaurant. The sauces came in small plastic containers and thankfully they didn’t spill.

Seasoning and flavor

I must confess that this was my favorite and if i could give you more points i would. The roll is made up of shrimp breaded in panko and fried to perfection, avocado, a thin layer of rice and topped with pieces of fish and a mayonnaise with hints of lemon, which gives it the vibe of ceviche. All the ingredients were fresh and prepared to perfection. The proportions between them was impeccable and the mayonnaise felt tasty and balanced, meaning its presence didn’t overshadow the other flavors. The crispiness of the shrimp fell perfect to counteract the smooth texture of the preparation.

Quantity and servings

The acevichado, being an interesting tribute to the union of two cuisines (Japanese and Peruvian) takes the best of both. In this case, taking into account that Peruvians prefer a well-served dish, this roll is committed to being more forceful. The table has 10 cortes And by using rice, shrimp, avocado, and fish, a person can easily satisfy a craving for makis.

Delivery and presentation

The delivery of the order, as in the previous case, complied with the biosafety protocol In its whole. The box in which the rolls arrived came numbered, so that the sauce corresponding to each can be easily identified. maki (An incredible plus for those of us who are just getting acquainted with this preparation and its complements). I had my doubts when I saw that they sent the rolls along with other hot preparations, but fortunately they arrived with the right temperature and the fish was not affected in the least.

Seasoning and flavor

Unlike the acevichado, the California has a much more flavor smooth and discreetThis is why sauces are necessary. All the ingredients felt fresh, well prepared and the combination was pleasant. Although, the avocado proportion It beat the fish and cream cheese and that made it a little less appealing – personal taste. It was decorated with two-color sesame And it was a good idea, as without that the texture would be too drab.

Quantity and servings

As we know, in general, makis tend to be hearty snacks because they contain a considerable amount of rice. But, between the two contenders this was the least forceful as it was the simplest. The portion was also 10 cuts and the filling was considerable, here they do not skimp on ingredients or try to cut costs by making a thick layer of rice.

Surprise factor

In this case we will talk about the most innovative and different bets that the Kuma Rolls card has. We were able to try the wangostinos. These wantanes were crispy, hot and with a considerable filling of well-cooked and tasty shrimp. The second dish we tried was the And Burger, which is a kind of sushi sandwich. Inside it has avocado, tuna and cream cheese, while on the outside it is covered with shari al panko and fried. Thus they achieve a crispy and golden exterior, but maintain the freshness and cold temperature that is expected inside. Finally, there is the Choripanko, which is a chorizo ​​sandwich made of pork belly with shrimp. This preparation is fried with panko, served on toasted bread and topped with a spicy sauce, avocado and chopped nori seaweed. A delight that was pleasantly surprised.
