Chanfainita recipe

  • 500 GB beef
  • 5 branches of peppermint
  • 4 branches of fresh oregano
  • 1 chopped onion
  • 1 tsp ground garlic
  • 2 kg boiled white potatoes
  • 1 tz. beef broth
  • 1 tbsp peanuts
  • 250 gmaíz mote

Heat half a cup of oil in a pot over medium heat and fry the achiote for two minutes. Get out of the fire. Strain and reserve the achiote oil. In addition, cook the bofe in a pot over medium heat with four liters of water, four sprigs of mint and the oregano for approximately three hours, until the bofe is very soft. Wash the bofe, rinse and chop. Reserve. In a saucepan, heat the remaining oil and brown for two minutes. Add six tablespoons of the achiote oil and one liter of water. Season with salt and cook until boiling. Stir in the bofe, potatoes, broth, and peanuts. Stir and boil for 10 minutes. Get out of the fire. Serve the chanfainita accompanied by the corn mote.
