This recipe for rice with olives is great (even if you are not fans of olives, I think you will like this recipe), because it has balanced and subtle flavors. It seems to me the perfect complement to the classic Christmas recipes. Besides, it is very easy and fast to prepare, with few ingredients.
- 3 cups of rice
- 2 cloves of garlic
- 1 laurel
- 2 tablespoons olive or vegetable oil
- 1 ½ cup of pitted olives
- 1 1/2 of Cup of Chinese onion finely cut (1 cup to mix with the rice and ½ to decorate)
- 3/4 of cup of chopped pecans (optional 1/2 to mix with the rice and ¼ to decorate)
- 1 teaspoon salt
Cook the rice as usual, with a tablespoon of olive oil, garlic, bay leaf and salt. If it is white, use the same proportion of water as rice and, if it is whole wheat, per cup of rice, 1.5 cups of water. While the rice is cooking, blend the olives and place them in a pan with a tablespoon of olive oil, cook for approximately 5 minutes, until it appears that the sauce has been cut off. One minute before removing it from the heat, add the Chinese onion (reserve a little to decorate). Place the rice on a plate and add the olive sauce, pecans and the remaining Chinese onion, mix carefully. Serve and garnish with pecans, Chinese onion and an olive.
