Dörcher Bier, beers and gastronomy from the heart of Pozuzo arrive in Lima

The heart of Pozuzo was installed in the middle of Larco avenue with San Martín street, in Miraflores, and is called Dörcher Bier, a restaurant and craft brewery that preserves the tradition gastronomic of its European origins fused with Peruvian creativity.

Pozuzo, this natural paradise of our central jungle was colonized in 1859 by Austro-German immigrants who brought with them their culture and tradition, the same that they preserve to this day. And in Dörcher beer They have the purpose of keeping all the festive atmosphere of Pozuzo, its colors and gastronomy in a single space and for all types of public.

Can you imagine a powerful menu with hamburgers, cheeses, jerky, sausages and ripe banana? Or some maki stuffed with jerky and bathed in cocona sauce? All this accompanied by some frozen Dörchers, the best and most famous Pozuzo craft beers, in any of their five presentations (coca, radler, pilsener, wheat and cranberry) and their signature cocktails, they are a dream come true in this new space miraflorino.

“What interests us most is the quality of the beer,” says manager Carlos Mejía. “Selling draft beer does not only consist of connecting the beer to a machine that cools it when it comes out, it is keeping it at an ideal temperature that can range between 0.5 ° and 3.5 ° so that it remains stable and does not have alterations or spoil. For that you have to have a cold chamber like the one we have, therefore the beer is kept at one hundred percent ”.

They have plenty of experience. Dörcher beer It has made its own beer since 2009, when Enzo Egg, its creator, began to experiment in Pozuzo until he reached the perfect flavors of a lager, the same ones that are enjoyed today in each of his beers.

Mejía tells us that currently the beer plant in Pozuzo produces around 55 thousand liters per month that are distributed to Lima, Pucallpa, Puerto Mayro, Pichanaki, Vrae, Satipo, among other places. In Dörcher Bier, the presentation that has had the greatest reception in the first month of opening is that of cranberry in barrels and bottles, that of coca is the most consumed by tourists. In addition to the five current presentations, a sixth beer will soon enter distribution, the dunkel, a dark lager with 7% alcohol, with a toasted tone and a chocolate flavor.

Summer experience

Having an ice cold craft beer on the Dörcher Bier rooftop is a pleasant experience, much more so in summer with the freshness of the Miraflores sunsets, but if you’ve already tried an obligatory one DörcherYou can also have signature cocktails, such as El Charly, based on vodka, rum and pisco, pineapple juice, passion fruit, blueberries and grapes. “I tried to represent the character of the person who inspired him, Carlos Mejía, a happy person and at the same time with character,” explains bartender Jeanfranco Cooquis.

Another option is the Pozuzo Lager, a reversal of the classic mojito with peppermint, white rum, lemon juice, and sugar. “To unify the flavors, instead of sparkling water I used pilsener,” says Cooquis, referring to the local’s beer spirit. On the other hand, El Otorongo Porter carries almond liqueur, rum, coffee syrup and also porter-style beer, a dark beer with notes of coffee and chocolate.

As part of its signature cocktail menu, there is also Juancito el dulce, made with mango syrup, pineapple juice and rum, it is a fruity and refreshing cocktail; and El Gringo, a herbal cocktail with jagermeister and aguaymanto syrup. There are several cocktail options, with beer and without beer, to enjoy.

Jungle mixture

Regarding the food menu, the chef responsible for merging Pozucina gastronomy with creativity and local ingredients is Miguel Pareja, who traveled several times to this corner of the central jungle to familiarize himself with the flavors.

The dishes are quite varied and represent our jungle and its fusions. For the Jungle Burger, for example, they use a custom mix with 70% beef, 20 strip roast and 10 pork belly. It has buttery cheese, fried ripe banana, jerky and a sweet cocona sauce with a cocona reduction with chili peppers. They use butter brioche bread accompanied by yellow potatoes, sweet potato or yuca.

The one that has quickly become a classic is the Mixto Pozucino: “This is a dish that you would find in Pozuzo, we bring the cured meats and smoked sausages from there and are served with fried ripe plantains, fried yucca and cocona chili. It has a touch of ours because instead of charapita we put chili pepper that mixes a better touch than onion. It has had a good punch, people like it and usually ask for a refill ”, Pareja says.

Given the reception that makis have in Lima, in Dörcher Bier they wanted to experience a presentation of makis keeping the spirit of the local, that is why their version of makis is filled with jerky, cream cheese and fried ripe banana accompanied and topped by our sweet jungle sauce. and the chalaquita de cocona. “The cocona reduction is a sauce that takes about 16 hours of reduction because it has an intense fishy flavor, it is sweet and a well-worked sauce,” says Pareja. The maki plate is decorated with edible flowers.

The possibilities to eat in Dörcher Bier are varied and surprising, in addition to those mentioned it would be impossible to escape from their Ceviche Selva with white fish, tumbo, avocado and patacones, or the traditional puzucinos such as Wiener Schnitzel, a breaded pork with spatzle (a pasta creamy); or the Goulash, which is a tender meat stew with red wine and spices and spatzle. You only need to choose one of the five possibilities of beers to accompany this trip through the central jungle and enjoy!
