  • 3 large onions
  • 3 tomatoes, peeled and pitted
  • 1 piece of yellow pepper
  • 3 tablespoons ground red pepper
  • ½ kilo of thin noodle noodles
  • Salt, pepper, cumin, oregano to taste
  • 4 tablespoons of soy sauce
  • Vegetable oil

Season the sweetbreads with salt, pepper, cumin, oregano, red pepper and marinate for at least one hour to take on the flavors of the seasonings. Chop the onion and tomato into not so thin pieces, pickled type. Put the oil in a pot to heat and add the red pepper, which you can replace with paprika or simply skip it. Then, you add the seasoned sweetbreads and let it cook over low heat and with the pot well covered. When it’s ready, add the onion, tomato, and soy sauce. Let everything cook for about 10 minutes over very low heat with the lid so that it sweats and pours its own juice.
