Tiger milk: recipes to start the Chinese New Year with a claw

Every February 1st, a chinese zodiac new year. This time the tiger is the animal that will command the House of Taisui and the designs of 2022, in such a way that the girls and boys born from now on will be brave, competitive and strong.

The influence of the tiger will fall on all the fauna so it will be better to be prepared and what better way to start this new year with a claw than eating some powerful tiger milk with fish, prawns and plenty of chili. With these recipes you will be prepared for a Year of the Tiger with challenges, adversities and unexpected turns. Follow the steps:

Ingredients:

  • 100 g mix of seafood (squid, octopus, shrimp, limpet, snail, chanque, clam, fan shells with coral)
  • 3 large prawns
  • 10 red limo peppers, without veins or seeds, chopped
  • 4 chopped celery sticks
  • 3 garlic cloves minced
  • 1 medium piece of chopped ginger
  • 1/2 cup evaporated milk
  • 6 tbsp. vegetable oil
  • 100 g cojinova in fillets
  • 3 1/2 tbsp. finely chopped coriander
  • 15 l tahiti lemons
  • 4 tbsp. minced hedgehog
  • 1 red onion to the pen
  • ¼ corn cooked and shelled
  • 3 large fan shells, with coral
  • 1 glazed yellow sweet potato, sliced
  • Ají-No-Moto Seasoning
  • Salt

preparation:

Blanch the shellfish -except the clams and scallops- in boiling water and respecting the cooking times of each one. Submerge them in ice water, drain and reserve. Blanch the large prawns in boiling water for a few minutes. Submerge in ice water, drain and reserve. Blend the peppers, celery, garlic, ginger, six tablespoons of milk and oil. Reserve the chili cream. Cut the cojinova into one-centimeter cubes and put them in a bowl with the seafood mixture. Season with salt and seasoning and mix with the chili cream and three tablespoons of coriander. Pour in the lemon juice -reserve two tablespoons-, stir and correct the seasoning. Add the remaining milk in the form of thread and mix until integrated. Reserve in the refrigerator. Meanwhile, in a bowl, season the sea urchin with salt and seasoning, add the rest of the coriander and the reserved lemon juice.

In each glass, place a bed of onion and serve the leche de tigre. Top with the corn, a scallop shell, a slice of glazed sweet potato, a shrimp and top with the sea urchin. Serve.

tiger’s milk by cojinova

Ingredients:

  • 1/2 cup cubed cojinova fillets
  • 1/2 cup lemon juice
  • 1/4 cup fish soup
  • 6 ice cubes
  • 1/4 cup chopped celery
  • 1 tbsp. chili limo without veins or seeds, chopped
  • 1/4 tsp. minced garlic
  • 4 tbsp. Court Serrana
  • 1 tbsp. coriander leaves
  • Salt and pepper

Preparation

Blend the fish, lemon juice, broth, ice, celery, ají limo, garlic, salt and pepper at medium speed for 40 seconds. Strain into short glasses. Serve with a spoonful of cancha serrana and decorate with coriander leaves.
