Mother’s Day: 3 recipes for alfajores to make at home and pamper mom

One of the best gifts is a good homemade dessert. Thinking about that and that soon we will celebrate Mother’s Day, Advantage gather three recipes of perfect alfajores for this date. A sweet snack, simple to prepare and that will conquer everyone at home. Take note of how to prepare a classic version with cornstarch, a different one with walnuts and a very Peruvian recipe for honey alfajores.

Cornstarch alfajores

Ingredients:

  • 1 can of condensed milk
  • 1 can of evaporated milk
  • 3/4 cup unprepared flour
  • 1 1/4 cups cornstarch
  • 1/2 cup unsalted butter
  • 1 cup powdered sugar
  • 1/4 tsp. vanilla
  • Salt

Preparation:

Pour the condensed milk and evaporated milk into a thick-bottomed pot and cook over low heat, stirring constantly, until you can see the bottom of the pot. Remove and let cool. Preheat oven to 150°C. Separately, sift the flour with the cornstarch and a pinch of salt. Reserve. With an electric mixer, beat the butter and half the powdered sugar until creamy.

Add the vanilla essence and then the mixture of flour, cornstarch and salt. Knead with your fingertips until you get a smooth dough. Refrigerate. Roll out the dough on a floured surface and cut out circles. Arrange the disks in a tin and bake for approximately twenty minutes. Remove, let cool and fill with manjarblanco. I sprinkled the remaining sugar.

walnut alfajores

Ingredients:

  • 150g butter
  • 1/2 cup sugar
  • 1 tbsp. manjarblanco
  • 2 yolks
  • 1 tsp. vanilla
  • 100g chopped walnuts
  • 2 cups prepared flour

Preparation:

Beat the butter with the sugar until creamy. Add the blancmange, the yolks, one by one, and the vanilla, continuing to beat. Outside of mixer, add nuts and flour. Shape into a no-knead bun and refrigerate wrapped in a dry dryer for one hour.

Roll out on a floured board until half a centimeter thick. Cut discs four to five centimeters in diameter. Arrange in the cans, leaving two centimeters of distance between each other. Bake at 200°C for seven minutes. Once ready, remove and let cool. One by two with white manjar and sprinkle with powdered sugar.

honey alfajores

Ingredients:

  • 2 tsp. wholemeal or white flour
  • 3 tbsp. powdered sugar
  • 1 tsp. baking powder
  • 1 cup vegetable shortening
  • 6 tbsp. fresh or soy milk
  • 1 tsp. unsalted butter
  • 1/2 cup thick chancaca honey

Preparation:

Preheat the oven to 200ºC. Mix the flour with the sugar and the baking powder. Add the butter. When you get a granulated dough, gradually add the milk. Integrate the dough and stretch it, with the help of a rolling pin, on a floured surface. Cut discs four centimeters in diameter and poke them with a fork to prevent them from swelling. Place them in a greased tin with the butter and bake at 180ºC for 15 to 20 minutes, until golden brown. Let cool. Join pairs of discs with the chancaca honey and serve.
