Ingredients:

  • 1 cup of parboiled quinoa
  • 1/2 cup of parboiled beans
  • 1 medium onion
  • 1 tomato
  • 100 grams of fresh cheese
  • Olive oil
  • 1/2 teaspoon pepper
  • Salt to taste

Preparation:

Parboil the quinoa in 3 cups of water for about 20 minutes. Drain the water and reserve. Let it cool. Chop the onion into small squares; Peel the tomato, remove the seeds and, also, chop it into small squares. Mix the quinoa with the onion, the tomato, the parboiled beans, the cheese chopped into small pieces and season with olive oil, pepper and salt to taste.

Note: You could also add chopped avocado to this preparation and it is extremely delicious. And if you don’t have olive oil, use vegetable oil.
