  • 5 cinnamon sticks
  • 7 cloves
  • A tablespoon of chuño

Preparation

Put the sugar in a saucepan over very low heat until completely melted. Then add water, apple, quince and pineapple peels, cinnamon and cloves. Cover the pot and let it boil for 20 minutes. Remove the skins and add the well-washed quinoa along with the apples, the quince and the chopped pineapple and let it boil for another 30 minutes. Pass all the cooked fruits through a fine strainer. You can do this by removing the pot from the heat and removing them from cooking; then, you return it to the pot. Dilute the chuño in a splash of cold water and, once dissolved, add it to your preparation that is already on the fire. Move quickly so it thickens slightly. Taste the sugar and you’re good to go.

NOTE: This preparation is an ideal Peruvian classic for family breakfast. You could add a little more chopped fruit, so it would come out a little thicker.
