Ingredients

Dough

  • 550g plain flour
  • 10g baking powder
  • 3 tablespoons toasted sesame seeds
  • 5g baking soda
  • 1 tablespoon of salt
  • 250g butter
  • 6 egg yolks
  • 1 tablespoon anise grain
  • 130ml warm/hot water
  • 1 Teaspoon vanilla extract

Honey

  • 600gr chancaca
  • 500gr white sugar
  • 2 teaspoons of veneer pepper
  • 3 cinnamon sticks
  • 10 cloves
  • 3 water apple units
  • 1/2 pineapple, peel and pineapple chunks
  • 2 units of quince
  • 2 oranges
  • 1 lemon
  • 1 tablespoon of glucose
  • 1 fig leaf
  • 1.5 liters of water

Preparation

For the mass

We make a fountain of flour and add the butter together with the yolks, the baking powder and the salt. We sand with our hands. We return to form a fountain and add the rest of the ingredients, integrating them from the inside out and then use our hands and finish kneading until it does not stick to the table. Cut into four portions, cover with plastic wrap and refrigerate for at least 30 minutes. We stretch on a floured countertop at least 1 cm thick and then cut sticks approximately the thickness of an index finger. Place the sticks on a floured baking sheet and bake at 180°C for 40 minutes. Remove and let cool before using.

Pour all the ingredients into a pot and cook over medium heat to infuse for at least 45 minutes. We pass through a strainer and return to the pot until it takes point of honey. Remove and let cool before assembling.

In a mold greased with butter, put parchment paper and then insert sticks of dough and honey until full, but trying to reverse the direction of the sticks on each level so that the honey does not leak between layers.
