Sea food: the causa recipe with panko prawns that you have to try this summer

I share one prescription perfect for these dates when, normally, we have more meetings at home and that it goes great to accompany this beautiful weather.

Of course my daughters and my whole family love it. They can be served as a starter or, also, in Chinese spoons as a snack.

Ingredients

Dough for the cause:

  • 1 kilo of yellow potato or sandy potato
  • 4 tablespoons of ají amarillo paste (3 chili peppers)
  • 2 tablespoons lemon (juice of 2 lemons)
  • 4 tablespoons of soybean oil approximately
  • Salt to taste

Preparation

Clean the peppers well, removing the seeds and veins. Then, boil 3 times, changing the water so they don’t sting. Subsequently, strain, remove the skin and blend with 1 tablespoon of vegetable oil. Reserve. Wash and cook the potatoes over medium heat with salt. Then, peel them and press them while they are still warm. Add the remaining 3 tablespoons of oil and salt. Knead and let cool. At the end, with the cold dough, add the chili pepper and the lemon, mix well, taste and rectify the salt if necessary. Reserve refrigerated until serving time.

Panko prawns:

  • 450 grams of prawns 21/25
  • 1 cup plain flour
  • 2 cups of panko
  • 2 units of eggs
  • 1 teaspoon minced garlic or ½ teaspoon garlic powder (optional)
  • Salt and pepper
  • 3 cups of vegetable oil

Preparation

Peel and clean the prawns. Then season with salt, pepper and ground garlic. Next, place three containers: one with flour, another with the beaten eggs and the third with the panko; Season all with a pinch of salt. In that same order bread them. Pass them first through the flour; then for the beaten eggs and lastly for the panko. Reserve refrigerated covered in cling film. When serving, fry in vegetable oil at 350 degrees Fahrenheit, little by little, in batches. Remove on absorbent paper before serving.

Sauces to accompany

Golf sauce (goes very well with prawns):

  • 1/2 cup mayonnaise
  • 1/4 cup ketchup
  • 2 teaspoons of pisco or whiskey (optional)
  • a few drops of tabasco

Preparation:

Place all the ingredients in a bowl, mix them well and reserve refrigerated until serving or assembling the cause.

Olive sauce (optional, gives it a delicious touch to accompany)

  • 1/2 cup of black olives without seeds and without brine
  • 1/4 cup mayonnaise
  • 1 tablespoon olive oil
  • ¼ teaspoon cored minced garlic (optional)
  • ½ teaspoon lemon
  • a pinch of salt

Preparation

Place all the ingredients in a blender, process and keep refrigerated.

To assemble the dish

In this case we serve it separately, in small balls with a hole in the middle to fill with golf sauce. Place the panko prawns on top of the mini causas and, in others, hard-boiled quail eggs cut in half. Among the mini causes place points of the olive sauce, accompany it with a green salad.
