When one thinks of hamburgers certain elements usually come to mind. A good bun, a hamburger seasoned to perfection and, of course, its inevitable portion of fries to accompany it. What happens if we add a very Peruvian concept to this? The result is Urku, a hamburger restaurant located in Jesús María that, in the eyes of Advantagestands out not only for its fun colored breads but also for the quality and flavor of its bet.
“Usually, when we talk about hamburgers, the concept is closely associated with the North American. We wanted to give it the Peruvian touch through the brand concept, our menu and the ingredients we use. That is why our slogan is: Native flavor”, explains Vidal Goormaghtigh, founding partner of Urku.
He and his partner Tito León had the idea in July of last year and by October the premises were ready. “It was a challenge to undertake a pandemic. With a lot of work we managed to find a place, we began to put together the menu, we located suppliers and we experimented to put together the menu”, adds Vidal.
Thus, they managed to create a comfortable, cozy space that was recently renovated to enjoy their hamburgers, salchipapas, sandwiches, milkshakes, juices, and other drinks.
color and flavor
Definitely what captures the attention, at first glance, are the curious and colorful buns in which the hamburgers are served. “My partner Tito had the idea. At first we wanted to find a supplier, but the breads that we found in all the places had too strong a color and did not convince us”, recalls the owner. So, they decided to bet on natural dyes based on vegetables such as beetroot, for red bread; spinach, for green; and the carrot, for the yellow bread. “The vegetables we use go through a process to remove their flavor and only give color to the masses,” says Vidal.
Our favorite burger was the Pillu Royal, a juicy meat patty cooked to perfection, cheddar cheese, bacon, egg, lettuce and tomato. In this case, we tried it with red bread -beetroot- and we can confirm that the flavor does not change at all. In addition, they seem to have found the perfect balance between a soft bread but with enough consistency so that it does not fall apart with the meat juices.
Other options that you can find are the Nativa, which also has Paria cheese flamed in oregano and peppers; the Paccus, with organic mushrooms sautéed in fine herbs and cheese; or the Puka Sonqo, with vegetables such as tomato, pepper and onion sautéed in soy sauce.
You can also enjoy salchipapas, which can be topped with sausage, grilled chorizo or grilled chicken. For the most hungry we recommend the Chakra that combines the three proteins.
If you lack reasons to visit Urku, the native fries that they include in their dishes may be the answer. They are crispy on the outside, creamy on the inside, and it is refreshing to be able to enjoy such delicious potatoes. If we add the list of sauces they offer, such as milk mayonnaise, house chili or chimichurri, the experience ends up being unforgettable.
