Gusto Creciente was born from their desire to demonstrate that a plant-based cuisine can be just as delicious as any other. “I used to have a business making fermented vegan cheeses based on nuts and when I published recipes on social media, many people wrote to me and told me that they wanted those dishes but already prepared, and not having to make them. “I was inspired by that,” Cristina narrates.
After almost two years of planning, this new space in Miraflores has a long menu that ranges from nutritious breakfasts to colorful salads full of vegetable protein and dishes from American popular culture such as the classic mac and cheese, but made only with ingredients from vegetable origin.
The decoration is industrial style. High ceilings, wooden tables, earth-colored environments, but with lots of vegetation. Cristina comments that she wanted people to see the restaurant from the street and be captivated by the aesthetics and be curious to know what type of food they offer.
Everything is designed to move you to another space and get out of the routine. The tableware was made especially for Gusto Creciente, so that the Peruvian ingredients stand out and the ferments, which are not necessarily so attractive, captivate the diner’s attention.
The letter
Brunch is something increasingly common among Lima residents, and this restaurant-cafeteria has one of the healthiest and most complete. You can order a classic bagel with cream cheese and candied tomatoes, or the favorite of many: the cinnamon bagel with almond cream. If you are looking for something more filling, you will find the capresse with Genoese pesto and cheese, made with rejuvelac, a quinoa-based ferment.
A more daring option is Qapchi, a delicious sourdough bread with qapchi (a dish of Ayacucho origin) and coated mushrooms. As there is always room for sweets, the brunch is complemented with a cupoazú panacotta.
In the background, some dishes that stand out are: the house curry, the kimchi rice with marinated seitan and the sweet Amazonian with crunchy oysters. Pizzas are the favorites of many. You can order the veggie or the pepperoni, based on vegetable protein. The healthy and nutritious table is set. Advantage.
