The best thing about this simple recipe, apart from being delicious and pretty, is that it can be made from any vegetable, following the same proportions. As I always say, everything enters through the eyes and if the portions are small, then, the more desire the boys will have to try it. It is a very good option to complete the daily portion of vegetables.
Ingredients:
- 3 cups steamed broccoli, al dente (cook 5 to 7 minutes)
- 3 eggs
- 1 tablespoon butter
- 1 teaspoon olive oil
- 1 tablespoon of prepared flour
- ½ cup evaporated milk
- ¼ cup Parmesan cheese
- Salt and pepper
preparation:
In a pot add the broccoli, butter and olive oil, move until the butter has dissolved. Then add a little salt, a pinch of pepper and the flour, stir until all the ingredients are well integrated. Pour the milk and cook for a few minutes until creamy. Off the heat add the Parmesan cheese and then the beaten eggs. Mix well and place in buttered cupcake moulds. Cook in a preheated oven at 175 degrees Celsius for about 20 minutes or until lightly golden.
Note: If you want to use another vegetable and this one retains water, make sure it is well drained. You can also prepare it in a single rectangular mold and double the recipe. It will take approximately 45 minutes in the oven.
