If you don’t have plans to Valentine’s Day and you want to surprise your partner this February 14, the chef Flavio Solorzano* teaches us how to prepare a delicious and simple last minute dinner. The menu consists of a quinoa salad, a delicious beef tenderloin filet, and to finish, an alfajor with pecans. Here is the recipe:

Ingredients:

Salad

  • 180 g grained quinoa
  • 1 unit of grated apple
  • 60g chopped raisins
  • 60g almonds
  • 60g chopped pecans
  • ½ arugula unit
  • 50g gorgonzola

Vinaigrette

  • 150ml vegetable oil
  • 50ml apple cider vinegar
  • 40 g brown sugar
  • salt white pepper
  • 30 g of dijon mustard

Topping

  • 40 g julienned prosciutto
  • ½ unit of apple slices

Base

  • 200 g of creamy goat cheese

Ingredients:

Loin

  • 1 steak
  • beef tenderloin (450 g)
  • 40ml vegetable oil
  • Salt pepper
  • 50 ml pisco
  • 150ml port wine
  • 100g white onion
  • 100 g elderberry jam
  • 60g of butter

Mashed potatoes

  • 300 g dwarf yellow potato
  • 1 cup of heavy cream 40 g of Parmesan cheese
  • 100g mushrooms
  • Salt
  • 30g of butter

Alfajores with pecans

Ingredients:

  • 150 g of prepared flour
  • 37g ground pecans
  • 37g powdered sugar
  • Pinch of salt
  • 100 g cold butter
  • ½ egg
  • ½ teaspoon vanilla essence

Preparation

Sift the flour, add the ground pecans, the powdered sugar, a pinch of salt, mix with the cubed butter so that it is sanded, once the butter is sandblasted with the dry ones, add the ½ egg and the vanilla essence, We must work without kneading, it must be a homogeneous mass and let cool for half an hour. Remove from the cold, stretch the dough sprinkling flour on the table, it will reach approximately 3mm. of thickness. Cut with the desired cutter, place on lightly buttered plates, take them back to the fridge for about 10 minutes. Preheat the oven at 180C for 10 minutes. Remove the plate from the cold and take our dough to the oven for 13 minutes.
