Make the perfect oatmeal chocolate chip cookie for Valentine’s Day

Let’s celebrate Valentine’s Day with a cookie. I recommend a heart mold, at this time there are everywhere and, believe me, it will always help you. For special dates I like my daughters to see that we can give beautiful things made with love at home.

What more beautiful and rich, for this celebration, than an oatmeal cookie with chocolate chips. I promise you that it is very quick to prepare and that, in general, they are ingredients that we have at home, otherwise you can always make some variation, do not limit yourself. The good thing about this cookie is that it is not necessary to let it rest before baking it, it can be baked immediately.

Ingredients:

  • 115g of butter at room temperature
  • ½ cup white sugar
  • ½ cup panela or brown sugar
  • 1 tsp vanilla
  • 1 egg
  • ¾ cup flour without preparing
  • 1 tsp cinnamon
  • ½ tsp salt
  • ½ tsp baking soda
  • 1 cup of oatmeal
  • 1/2 cup of ground chestnuts (whatever nut you have on hand or oatmeal)
  • ½ cup chocolate chips (or raisins)
  • ½ teaspoon lemon juice

preparation:

Place the flour, cinnamon, salt, and bicarbonate in a bowl, incorporate and reserve. In another bowl, beat the butter with the sugar and panela until creamy. Then add the egg, vanilla and lemon juice, mix. Mix the two mixtures little by little, dry it to creamy and incorporate the ingredients well, do not mix too much. Then add the oatmeal, nuts and chocolate chips. Place the cookie mixture in a greased mold with parchment paper on the base. Cook for 20 to 25 minutes in a preheated oven at 375 degrees Fahrenheit or until golden brown. Let cool before serving. Enjoy!

Note: If you wish, you can accompany it with berries such as strawberries, blueberries, raspberries or blackberries, with a scoop of vanilla ice cream and mint leaves. You can also make individual cookies with the measure of a teaspoon, you will need only 8 minutes in the oven. When they cool down, they can be kept ready in a Tupperware container, separating the floors with parchment paper, in the freezer for the next few weeks or, in a can, if they will be consumed in the next few days. Great option for lunch boxes too.
