Homemade cremoladas: learn how to prepare the creamiest and richest

Lima, February 16, 2022Updated on 02/16/2022 07:00 am

“For a good cremolada you need good fruit, which is neither too ripe nor too green. We do not use ice: you make the nectar with each fruit and freeze it with the minimum of water and the minimum of sugar. That’s how they come out rich.” These are some of the tips from an expert to prepare the perfect cremolada.

In this note, we teach you how to prepare two: one of pure fruit (mango) and another of fruit and milk (strawberries with milk). Here are the tips from Angélica Obregón, from Cremoladas Angélica:

Mango cremolada recipe

For 4 glasses, well served:

Ingredients:

  • 2 large mangoes (between 1 kilo and 1 kilo 200)
  • 2 tablespoons of white sugar
  • Between a cup and a half and two cups of water (if the consumption is instantaneous, you can replace the water with ice, the same amount). It should be like a puree, not like a juice.

preparation:

The procedure is very simple. Peel the mangoes into large pieces and blend them together with the water and sugar until a uniform mixture remains.

Put everything in a container and put it in the freezer overnight. The next day, when serving, stir the mixture with a spoon or even blend it again to make it creamier.
