This recipe for rice with olives is great (even if you are not a fan of olives, I think you will like this recipe), because it has balanced and subtle flavors. It seems to me the perfect complement for the classic Christmas recipes. Besides, it is very easy and quick to prepare, with few ingredients.
- 3 cups of rice
- 2 cloves of garlic
- 1 bay
- 2 tablespoons olive or vegetable oil
- 1 ½ cup pitted botija olives
- 1 1/2 cups Chinese onion finely chopped (1 cup to mix with the rice and ½ to decorate)
- 3/4 cup of chopped pecans (optional 1/2 to mix with the rice and ¼ to decorate)
- 1 teaspoon salt
Cook the rice as usual, with a tablespoon of olive oil, garlic, bay leaf and salt. If it is white, use the same proportion of water as rice and, if it is integral, per cup of rice, 1.5 cups of water. While the rice is cooking, blend the olives and place them in a pan with a tablespoon of olive oil, cook for approximately 5 minutes, until the sauce seems to have cut. A minute before removing it from the heat add the Chinese onion (reserve a little to decorate). Place the rice on a plate and add the sauce of olives, pecans and the rest of the Chinese onion, mix carefully. Serve and decorate with pecans, Chinese onion and an olive.
