Sweet potato pancakes: a delicious and nutritious recipe for the little ones in the home

Simply fantastic. Perfect to enjoy on the weekend and also for lunch boxes. I recommend preparing them with baked sweet potatoes. I make them when I have leftover baked sweet potatoes.

Place the sweet potato pulp, eggs and milk in a blender, blend well. Then add the rest of the ingredients and blend for a couple more minutes. Finally, pour the dough (with the help of a small ladle, so that they are all the same size and cook evenly), in a non-stick skillet, over medium heat, with a little bit of coconut oil or butter. Cook a couple of minutes per side. Repeat the action until you finish cooking all the dough. Serve accompanied by butter, honey and fruit.

Note: this recipe can be given to babies one year and older.
