I share with you this super delicious recipe for guacamole with peas. As a mom I’m always looking for new ways to include more vegetables in our meals and this is a fantastic one. My daughters love it!

Cook the peas in boiling salted water for approximately 5 to 6 minutes. Then strain them into cold water with ice to stop cooking and turn them green. Then put in the blender and blend: the avocados, lemon juice, olive oil and peas. Reserve. Place in a bowl the onion cut into small squares (if you wish you can wash it with salt so that the flavor is not so strong and then strain it and dry it), the tomato into small squares, the chopped cilantro, the salt and the pepper. Immediately pour the avocado cream with peas and incorporate all the ingredients. Taste to see if you need to adjust flavors. Serve and enjoy accompanied by some delicious tequeños, chips or some homemade fajitas.
