Pasta is always welcome at our table, so today I propose this recipe, where you can incorporate a very nutritious food such as spinach.
- 4 chicken breast fillets
- 1/2 kilo of noodles
- 2 cups heavy cream
- 2 cups chopped spinach leaves
- ¾ cup of grated Parmesan cheese
- 2 large tomatoes
- 1 tablespoon butter
- 4 garlic cloves, minced
- A splash of olive or vegetable oil
- 1 teaspoon garlic powder or ground
- 1 teaspoon of pepper
- 1 teaspoon paprika (optional)
Season the chicken fillets on both sides with the salt, pepper, garlic and paprika to give it a little color. If you do not have this species you can skip it. Once seasoned, fry it in hot oil and set aside.
It is time to boil the pasta you chose al dente. You can almost always find the cooking time on the back of each package. In the same pan in which you fried the chicken, add the butter, the finely chopped garlic, along with the peeled tomato, without seeds and diced. Let it brown over low heat for about 3 minutes.
Add the raw spinach, washed and chopped to your liking. Two minutes later, add the heavy cream and integrate everything, always over low heat. After about two minutes, add the Parmesan cheese and taste the salt. Now is the time to add the parboiled pasta and the fried chicken that you previously chopped to your liking. Stir all the ingredients gently, especially so that the pasta takes on the flavor of the sauce over very low heat and for about two minutes, and it is ready to enjoy.
