A few months ago, the Sukha cafeteria opened its doors and since then it offers vegetarian and vegan products, which accompany a good, freshly brewed Peruvian coffee. Near the most commercial area of ​​the Jesús María district, the Sukha cafeteria has emerged as a welcoming refuge for those of us who love desserts. This vegetarian/vegan corner not only offers a warm atmosphere, but has also conquered with its delicious creations and options 100% free of animal products.

Alain Rodriguez, co-founder of Sukha, explains that this cafeteria was born a few months ago with “the objective of sharing the first step towards a more conscious life” and having as a philosophy the term “Ahimsa” (Sanskrit word) which refers to a philosophical concept that advocates non-violence and respect for life. ““We try to offer our public more nutritious food with less animal suffering,” adds Rodríguez.

Before opening this cafeteria with his partner and girlfriend Leslie Farfán, he worked in another vegan restaurant and cultural house, where he learned the bases of plant-based food as well as the philosophy of non-violence towards animals.

This project has been the result of a lot of work and dedication to offering products that are vegetarian or vegan but that diners who are not veggies do not miss the taste of meat, dairy or eggs.

Leslie Farfan, Sukha pastry chef and co-founder, explains that “At first it was not easy, but with the confidence we have in our products, we know that we are on the right track”.

In addition, this cafeteria has Melissa Cavero (Leslie’s mother) as a teacher and she has been a pastry chef since she was 16, and she taught Leslie everything she knows.

The young businesswoman remembers that at first it was a little frustrating for her mother because when she transformed traditional recipes into vegan ones, they did not have the same appearance or flavor, but over time, she discovered new ingredients; and which ones were ideal to replace eggs and milk. “He was surprised to realize that, for example, nothing happens if you take away a keke’s eggs, they are still just as delicious.”Add.

At Sukha you will also find freshly made breads as well as vegan desserts.

They have a varied menu that ranges from desserts such as chocolate brownie, blueberry crisp, apple pie, vegan and traditional alfajores, chocolate cake, banana, fig and chocolate cakes.

As for savory dishes, they find sandwiches with soy meat, vegan and vegetarian empanadas, as well as mixed ones with vegan ham. If you are looking for heartier dishes, you will find pizzas and hamburgers made with legumes.
