Wings with purple corn or cocona? This is Alas Salvajes, the ‘point’ in Chorrillos with chicken wings with the most daring flavors

After working in his father’s business in Cusco, Gabriel Benites – owner and manager of Alas Salvajes – decides to return to Lima. At that time, the wings were beginning to appear on menus and gain popularity, so Gabriel was bitten by the curiosity bug. “What if I bet on preparing wings?” the owner of this proposal asked himself and dared. First at home, of course, preparing versions with more traditional flavors and allowing family and friends to try their seasoning.

In its first location, about four blocks from the current one, it has served the public since May 2018. “We began to become known in the area, look for clients and added the delivery option, which allows us to reach more people,” explains Benites.

After a year and a half, the business closed due to personal issues, but, due to life, Gabriel returns to preparing wings during a pandemic as an alternative to work. At the end of 2020, he resumed Alas Salvajes as a hidden kitchen, in his family’s home. In November 2022 they are committed to opening the location where they are currently located and their story continues to be written.

If you visit them, in addition to an interesting Peruvian fast food proposal, in a simple and cozy atmosphere, you will find bubble tea. This idea was thought of and created by Gabriel’s mother and sister, who also work in the business along with another of his brothers.

Flavors to repeat

Gabriel is a self-taught chef. He always liked cooking and his knowledge was nourished by experience and trying recipes at home, watching videos and learning about preparations on the Internet. “Many of the options we offer are already known and have a standard recipe, but I always try to give them a touch with Peruvian ingredients, which help me give it a different flavor,” he says.

It has managed to standardize its recipes, which is why it promises consistency in the quality and flavor of its wings, bonless and its vegan option, based on breaded cauliflower. You can enjoy from 6 to 36 units.

Boneless are the ideal option for those who prefer to eat pure meat.

A curiosity is that on their menu, each sauce is named after an emblematic bird of Peru. They currently have 15 flavors, among which we find Parihuana (BBQ), Lechucita Bigotona (Teriyaki), Condor (Purple Corn) and Charrán (Acevichada), among others.

We tried four types of wings: the purple corn, the cocona, the spicy acevichadas, and the honey and mustard ones. We can say that the four flavors were a resounding success, not only because of how tasty the wing was, but because of the sauce itself. The sauces were interesting, balanced and with the perfect consistency to cover the entire surface without too much sauce left over.

The breaded cauliflower bites are vegan.

Boneless are generous cubes of breast that can also be enjoyed with the same sauces, but we opt for more classic options: BBQ and Teriyaki. The veggie options (which are vegan as described by Gabriel), can be enjoyed with any of the sauces. Freshly made, they are crunchy, come in a generous size and have a lot of flavor in the breading.

Sides include three types of fries (yellow, Andean, French), yellow sweet potatoes, onion rings and crispy bananas.

We recommend the yellow sweet potato, crunchy and with the perfect sweet touch.

They also offer burgers, of which we tried the Popoporky, which includes two smash burgers with cheddar cheese, bacon jam with touches of coffee, tomato, arugula and potato chips. Their menu also includes plated options, such as the classic salchipapa, or more substantial versions with cylinder-smoked meat burger, banana and egg.

We highly recommend enjoying bubble tea, which can be red, green or Oolong. They offer 40 varieties with coffee, cocoa, milk or various fruits such as blueberries, mango, Burgundy grapes or pitahaya. The favorite, without a doubt, was taro, a quite traditional flavor reminiscent of a different vanilla.

The Popoporky has bacon jam with touches of coffee.
