Samsara: from ‘dark kitchen’ to vegan restaurant, an ideal proposal for a meatless ‘weekend’

Luis, founder and chef behind Samsara, shared with Provecho his experience from traditional food to vegan cuisine. Regarding his training, he studied in Spain and also at the San Ignacio de Loyola University in Peru. This knowledge has helped him create a unique culinary proposal, which not only satisfies the palate, but also the conscience, as it is 100% plant-based.

The young chef remembers that the transition from traditional to vegan recipes was not easy, especially at a time when information and resources were limited. However, over time Luis and his team have managed to produce dishes that are very similar to the traditional ones, always using local ingredients, but adapting international culinary techniques.

It all started in a small space, where he prepared menus for his clients. After cooking in the morning, he distributed the food in the afternoon. Over time, he implemented à la carte dishes, from Creole to ‘comfort food’. Luis has expanded his proposal, maintaining its essence of offering vegan and delicious alternatives.

“As the menu is what created us, then it is a service that we maintain, in reality now our menu service reaches almost all of Lima. In addition, we provide weekly plans with free shipping and something important to us because we know that the person will eat vegan for at least a week,” she says.

Concern for customer satisfaction is evident in every aspect of their service. From customizing weekly menus to including healthy options, Luis strives to offer a good dining experience for all his clients, because if anyone wants a meal with more vegetables or a healthier meal, he does it.

Since this summer, Samsara’s growth goes beyond its culinary proposal, as it opened its terrace for nighttime events, seeking to create an inclusive space where the vegan community can connect, share and enjoy good food and company.
