Chili pepper recipe: tips to make you look like an expert in grilled chicken

Grilled chicken is such a beloved dish among Peruvians that, since 2010, it has had a day in its honor. But not only the grilled chicken has conquered us, so has the rich chili pepper that combines perfectly with our crispy chicken and crispy potatoes. For this reason, the chef Roberto Mamani of the restaurant el ‘Pollívoro’ (more information on their website) taught us the quick and easy recipe along with its secrets to make this dish more succulent.

Ají Pollívoro Recipe (600 ml.)

INGREDIENTS:

  • 200 grams of yellow pepper
  • 15 grams of garlic peeled
  • 1 branch of huacatay (only leaves)
  • 30 ml white vinegar
  • 7 soda cookie units
  • 50 ml oil
  • 100 ml mayonnaise
  • 12gr of salt.

PREPARATION:

Put all the ingredients in the blender, indistinctly, blend and feel the salt little by little. All this until you get the perfect point and the right creaminess. Enjoy with your grilled chicken and with your native chips.

EXPERT TIP:

You can store this sauce in a sealed container, it can last a few days to accompany other meals.
