Preparation:

For the white sauce, in a saucepan over medium heat, melt unsalted butter and add unprepared flour. We stir for a few minutes to cook the flour and when we see that it is slightly golden, we add the fresh milk. Stir with a balloon whisk non-stop until it takes a point and thus we will prevent lumps from forming. Season with salt, white pepper, nutmeg and set aside. In a frying pan over medium heat, heat a jet of oil and fry our fish fillets previously seasoned with salt and pepper. When they are golden on both sides, remove and leave on a separate plate. In the same pan where we sealed the fish fillets, add a splash of oil again and fry the chopped onion together with the ground garlic. When the onion turns from white to translucent, add the baby spinach and sauté until wilted. We place this mixture in a baking dish to make a base, the fish fillets go on top and we cover with the white sauce. We take it to the oven to gratin but not before adding a generous amount of grated Parmesan cheese but it is optional. Once the desired browning is achieved, we serve with golden potatoes or white rice. Enjoy!
