THE BEGGINING

Kimberly Farfán, founder of Food & Fit, explains that this project began because she wanted to create a space that will provide health to its diners. “When going out with friends, family or as a couple; We usually find unhealthy food options. That’s why Food & Fit started with the goal of offering healthy options as well as delicious options so that everyone can enjoy in one place. “At the beginning we wanted to promote healthy food to achieve a fuller and more balanced life,” Add.

“The public really likes this project and we will gradually grow to give them more healthy options. At Food & Fit we have classic and more nutritious options, and more and more people decide to opt for something healthy. When the customer sees that a sandwich that is vegan and healthy, they choose it because they are changing their lifestyle,” she says.

This cafeteria has been evolving, they started offering desserts, smoothies and some sandwiches and currently, they have an extensive menu that includes vegan, gluten-free and keto options.

“As they are natural products (that do not have chemicals or additives) we have to be constantly attentive so as not to lose ingredients and desserts. However, where there are obstacles, there is learning and over time we learn more,” he comments.

And it recently launched a 100% vegan menu, which is very nutritionally complete and delicious. We believe that it will surprise even the most skeptical.

THE LETTER

The vegan menu was prepared in conjunction with the content creator and vegan chef Alessandra Arce, who with a lot of creativity and knowledge of plant-based cuisine, has managed to create dishes that are difficult to find in restaurants of this type.

For Alessandra, having protein in the food is a priority, because in many non-vegan restaurants the plant-based options may be delicious or very healthy, but they lack protein.

As an alternative protein they are using the Peruvianveef brand, who have developed plant-based proteins that are nutritionally adequate, but above all have a meat-like texture and great flavor. The creators of this vegan menu commented that on the opening day many people could not believe that they were eating it because it was vegan thanks to the texture and flavor.

Alessandra Arce says that one day she got together with Kimi and cooked vegan dishes for her, proving that vegan food can be delicious and nutritious. And so, little by little they put together the vegan menu.

“Seeing non-vegan people happily try something plant-based, for me it’s something incredible, I’m very grateful to Kimi for the opportunity. It has been very fun to work with such a capable team (…). In addition, we have created dishes for the whole day, so you can try vegan food for breakfast, lunch or whenever you want, having a balance between sweet and salty”adds Alessandra.

For a different breakfast, you can try baked oats or matcha overnight oats. If you want something sweeter and more traditional, you can try the gluten-free banana waffles; and if you are looking for the house favorite, you should go for the chicken bread.
