Italian mondonguito recipe

Ingredients:

  • 1 kgmondongo
  • 4 tbsp oil
  • 1 cup chopped onion
  • 1 tbsp minced garlic
  • 1 cup tomato without skin or seeds, cubed
  • 3 tbsp tomato paste
  • 2 bay leaves
  • 2 cooked carrots without skin, on sticks
  • 1 cup cooked green peas
  • 1 cup grated Parmesan cheese

preparation:

Wash the tripe with water three times. Drain and cut into strips. In a pot over high heat with two liters of water, cook the tripe for 30 minutes, until soft. Remove and drain. In a saucepan over medium heat with three tablespoons of oil, sauté the onion and garlic for 10 minutes. Add the tomato, tomato paste, bay leaf, tripe and the rest of the oil, and cook for 10 more minutes. Stir in the carrot, green peas, and three-quarters of a cup of the Parmesan cheese. Remove from heat, sprinkle with remaining Parmesan cheese, garnish with French fries and rice, and serve.
