Hummus: make this chickpea-based ‘dip’ perfect to celebrate the New Year

A super rich, easy and light dip to start the nibbling these holidays and to enjoy all summer. Hummus is a delicious chickpea-based cream. Normally when I prepare chickpeas at home, I separate a little, without dressing, just with salt at the end of the preparation, and freeze with a little of the cooking water, to make the process of preparing the hummus more agile and simple.

Ingredients:

  • 1 ½ cup cooked chickpeas
  • ¼ cup of cooking or regular water
  • 1 teaspoon toasted sesame or sesame oil
  • 2 tablespoons olive oil
  • 2 teaspoons of lemon juice (2 lemons approx.)
  • 1 clove of garlic parboiled.
  • Salt and pepper

Soak the chickpeas overnight and cook until soft. Process the chickpeas with the water, the toasted sesame, the olive oil, the lemon juice, the garlic clove, salt and pepper to taste (not much). Reserve. Serve with raw vegetables, fruits, and pita chips, if desired. I accompanied it with pear and apple sticks (with a few drops of lemon so they don’t rust quickly), zucchini sticks with the skin without seeds, and carrot sticks. My daughters love it!
